Bread Ahead, the bakery and baking school that started at Borough Market in 2013, will open at 92-94 High Street, Harpenden, on Monday 12 October. It is the company's first bakery outside London.
The unit runs to about 2,500 sq ft. Downstairs will be an artisan bakery and all-day dining room; upstairs, a dedicated baking school classroom. Workshops are due to begin in January 2027, with children's baking sessions planned around the October half-term.
Until recently the address was Jacksons Plumbing & Heating Merchants. A trade counter becomes a bakery counter. The space, spread over basement, ground and first floors, was marketed to let as a restaurant at about £80,000 a year, which gives some sense of the commitment being made to the street. How long it stood empty between the two occupiers is not on the public record.
Harpenden is also the test bed for a change in how the company grows. The branch launches an owner-operator model, under which an established member of staff takes ownership of the bakery rather than the company running it from the centre. "If someone has the talent, determination and ambition to run their own bakery, I want us to be able to give them that opportunity," founder Matthew Jones said.
Bread Ahead has seven sites in London, among them South Kensington, Wembley and King's Cross, and outposts in the United States, Saudi Arabia, Dubai, Thailand and the Philippines. It also runs the Bread Ahead Academy and the Future Bakers Project. The Harpenden business has registered with food safety inspectors and is awaiting its first hygiene visit, as new registrations are.
This is a different order of arrival from the home-based bakers who registered in the town last week and whom this paper reported on 7 September. A multi-site brand with an international estate has chosen Harpenden High Street for its first step out of London, and it is taking a big unit to do it. For a street that had been advertising that unit to let, an occupier trading from breakfast to evening, with classes running above the shop, is straightforwardly good news: a reason to come into the town centre rather than pass through it.
One name is still missing. The whole point of the owner-operator model is that a person, not a head office, owns this bakery, and the company has not yet said which of its bakers that is. Harpenden will find out by 12 October at the latest, when they open the doors.
